Yesterday I came home from work and found...

It's not even Valentine's day yet!? Matt's always one for sentimental surprises. What a sweetheart!
Also, I made this for breakfast:
I don't care if it looks like baby food. So good! I'm going to become really good friends with green smoothies...hopefully Matt feels the same way.
And then, I made this for dessert:
That's right. Garbanzo bean brownies. Looking for some extra protein and fiber in your diet? Why not get it with chocolate?? It is essentially all of the same ingredients, except you swap white, over processed, enriched, bleached flour for garbanzo beans. Put everything in a blender, add some chocolate chips, and voilĂ ! This was a first attempt, but I do foresee more coming. Spark Recipes had this great recipe: Garbanzo Bean Brownies. Check it out!
I would also like to reiterate my point about the amazing husband part (see above) with this:
Matt made bread! From scratch, and it was so so so delicious! Matt is the official bread and waffle maker of the Erickson home. He gets better and better with every new batch. I was sad to see it go (yes, it's already gone). I am looking forward to years of delicious bread from this wonderful man :)
Shout out to Stephanie and Nicki. Remember when I said we were going to start a quilting class (see last post)? Well, it has started. I'm already lost. Fortunately, we are all in the same boat (except for Stephanie because she's a mom; she knows everything!). Here is the product of class #1:
These are all of the pieces we cut for block 1. We will be making a new block every month, and by the end of the year, we will have a whole quilt! I'm not the biggest fan of the colors, but I guess it will be done just in time for Christmas. Here's a printout of what the finished product Should look like:
Should be fun! Hopefully we will get better as we go...hopefully.
